I just can’t cook. People try to give me simple recipes, and I always make the ugly versions of them. There are a few dishes I can make pretty darn well, but those take a few hours. I don’t usually have a few hours to cook, so I make those dishes only a few times a year. With my oldest basset playing football now five days a week, and hubby as the assistant coach, I need to have dinner ready for them by the time they get home at 8pm. Horrible time to eat dinner, and a horrible time to eat a horrible dinner. Hubby decided to help by ordering one of the subscription meal services where you get all the ingredients for five meals along with simple recipes to follow. Last night I tried to make the first dish, and it sounded wonderful! Pesto Burgers and Cottage fries. Easy enough, right? No…not for me. I have never in my life made a burger. The directions said to cook the burger for three minutes on each side. I did that. But it looked raw, so I cooked it for an additional 20 minutes on each side. After the 40 total minutes, I still wasn’t sure it was cooked, so I left it in the skillet, covered, with the heat turned off. Turns out I wasn’t supposed to use ALL the ground beef they sent in the package. Oh.. that makes sense. Did I mention that I also wasn’t a good judge of portions?
