I am falling more and more in love with my Instant Pot. Since I really hate cooking, but I have a lot of guilt for not cooking homemade meals for my family, the Instant Pot is the perfect kitchen tool. My poor family gets pretty tired of all the chicken I make badly, so I decided to try pork chops. Again, I hate cooking so the easier the better. This recipe that I pulled together from numerous other recipes is definitely going into the regular rotation in my household. The seller on it was both my boys, who are very picky eaters, gobbled it up without a fight.

Ingredients:

4 Boneless Pork Chops

2 tablespoon Olive oil

1 16oz jar Pineapple Salsa

1 cup water (optional)

Directions:

Set instant pot to saute and add olive oil. Once heated saute the pork chops for one minute on all sides. Once the pork chops have been sauteed on all sides turn Instant pot off. Add entire jar of pineapple salsa into the pot. A few of the directions that I was reading said to add 1 cup of water as well. I did and it came out extremely watery. Still yummy, but I think I will forgo the water next time because I am sure the salsa has enough fluid in it. Next lock cover into place and seal steam nozzle. Set on the manual setting for 18 minutes. My pork chops were very thick. Once the timer goes off you can naturally release pressure for 5 minutes and quick release remaining pressure.

I served my pork chops with wild rice. The kids loved it and it was super easy! Enjoy!
