One of my favorite dishes when I go out for dinner is Broccoli Beef. When I was a kid I ordered it every single time and I have never grown tired of it. So I decided to try it in the Instant Pot. I found a great video by Pressure Luck, that was easy to follow and very entertaining. My gauge if a dish is a success or not is if my baby bassets ask for seconds, and in this case they did. I was not as big of a fan, but to be fair it was because I used steam in the bag broccoli instead of fresh. Big mistake. I am starting to think the kids loved it because they couldn’t actually see any broccoli. If your kids are not a fan of broccoli, then by all means, use steam in a bag and it will turn to unidentifiable mush. If you are a fan, use fresh only. The video shows cooking the broccoli with the beef, and the directions on the original website say to prepare separately.  The original recipe is from a site called Adventures of a Nurse.

Ingredients:

1 small onion

3 cloves garlic

1.5 pounds thinly sliced steak

3 tbs sesame oil

3 tbs olive oil

1/3 cup soy sauce

3/4 cup beef broth

1/3 cup brown sugar

Fresh or  frozen Broccoli

1 tbs cornstarch

Directions:

Place oil and meat on saute in your pot. Until meat is brown. Add in onions and garlic continue to saute until onions are tender. Add in beef broth and soy sauce. Stir in brown sugar and stir until dissolved. Place on 10 minutes high pressure and do a natural release. Mix 2 tbs water with 1 tbs cornstarch and add to your mixture. Mean while steam your broccoli and cook your rice according do directions. Stir in the broccoli and serve over rice.
